Thanksgiving…

This will be our last post for this week of Thanksgiving. Our list for things for which we are thankful is endless. At the top of our list, Scott and I give thanks for each one of you that have cared and followed our adventures… your love and support has carried us through some of our more trying moments… Each one of you hold a unique spot in our hearts that we treasure… We wish each and everyone of you a Safe… Happy… Healthy… Thanksgiving…

For our Thanksgiving Day we will be enjoying a vegan dinner of: 

roasted cauliflower with a bright, umami-rich miso and lemon-garlic sauce…

wedges of roasted acorn squash, roasted sweet-and-sour style with maple syrup, sherry vinegar and cayenne pepper…topped with crunchy hazelnuts, sesame seeds, and herbs…

slow-cooked cremini mushroom stuffing with rosemary, extra-virgin olive oil, white wine vinegar, sautéed shallots and vegan kimchi…

a stew of cherry tomatoes and chickpeas braised with garlic and rosemary on a bed of charred escarole…

vegan mushroom gravy…

green beans with crispy garlic and parsley…

vegan cornbread…

and, for dessert we will have vegan pumpkin pie and a sweet potato blondie with spicy cashews…

Side note: last night we were blessed with three more inches of snow… a beautifully magical winter wonderland… waiting for the sleigh bells…
